Castroneves visited Pyles’ restaurant in Dallas as part of a promotion for the Bombardier Learjet 550k at Texas Motor Speedway on June 6. Castroneves, officially deemed a sous chef by Pyles, learned to prepare salmon with roast banana black beans and coconut curry; chicken risotto with corn, red bell peppers and pineapple; and chocolate fondon.
“It was delicious,” said Castroneves, who two days earlier won the pole for the Indianapolis 500. “I loved the coconut curry with the salmon. I’ll always be a salmon fan. I think it’s a great food and it’s what I eat every night before I race because it’s light. I loved the way Chef Stephan did it. I want the recipe.”
Castroneves wasn’t disappointed with the dessert either.
“The dessert, chocolate fondon, was unbelievable,” he said. “I’m not French, but it was so good even I know how to say it. The experience was just incredible. Stephan has 25 years in the business and there is no doubt that he is absolutely phenomenal. I learned to appreciate cooking today.”
Pyles has cooked for the likes of Queen Elizabeth II and Mikhail Gorbachev to Mick Jagger.
“Helio shows lots of promise in cooking,” Pyles said. “Just like his dancing, this is just one more thing for him to conquer.”

I have enjoyed following your career for years. I had the chance to have a picture taken with you in Milwaukee in 2006. After returning home, I found out I had Luekemia I have fought for life to the best of my ability. I enjoyed your DWTS win through Chemo. My cancer returned during your tax evasion charges and trial. I told my husband if he can be strong enough to fight his battle I will be strong enough to fight cancer again. I had to get 2 pints of blood to attend Indy. and I am really pushing the limit to attend Milwaukee, but I will be there! I will be there, with PIT passes in high hopes of getting one final picture with you. Your enthusiasm and trust in those around you continue to give me strength. You looked good in a chef’s apron. Chef Stephan is fortunate to get a signed apron with that Kansas learjet race logo in it. We knew you loved kit kat chocolate bars from one of the races last year, BUT OMG – that was a yummy-looking chocolate birthday cake he made for you. We saw, too, that he gave you a cookbook – so that means we expect you to try cooking some of the recipes in that book!
It was also a pleasant surprise to see you on DWTS many times Tuesday night, and to hear your Helioism accent we all love! Looking forward to the Indy500 race now!!!

Watch out for that coconut curry on the salmon. It turns an otherwise lean and healthy meal into a saturated fat bomb!!
You can buy a low-fat version of cocount milk but it’s still rich stuff. mmmmmmmmm chocolate cake!!!

The chef’s apron becomes you, Helio. But then I don’t think their isn’t anything in life you would not enjoy… except…well, that’s behind you now thank goodness. Sounds like you had a lot of fun. Going now to search youtube to see if any video of your experience is available.
